Where to go? - Southeast Asia and Australia

For a three month trip through Southeast Asia and Australia the first question we asked ourselves was what places we'd like to see. A map and Lonely Planet's travel guide "Southeast Asia on a Shoestring" helped us choose our asian destinations.
Starting in Hong Kong - a place im dying to visit because thats where my mother's family originates from - we will go south visiting Hanoi, Halong Bay, Da Nang and Hoi An in Vietnam. The 'must see' Angkor Wat next to Siem Riep in Cambodia is definitely on our route, but will, for time is short, stay our only Cambodian stop. Thailand is the country we're planning to stay in longest (depending on spontaneous choices we make during our time there that might still change), half of the 2.5 planned weeks in Thailand will be spent in Bangkok and Chiang Mai, the rest on the eastern islands Ko Samui, Ko Phayan and Ko Tao. Moving further south we reach Malaysia where we are heading to George Town and Kuala Lumpur. Finally we will be flying to Australia from Singapore.
In Australia we land in Cairns and travel down the Gold Coast from the Great Barrier Reef all the way to Melbourne, stopping in Brisbane, Sydney and Canberra on the way.
We plan to stay an in Melbourne entire month, visiting my Aunt and Uncle at their farm.
Originally visiting Myanmar was included in the plan, however, due to political unrest, expensive flights (300 one way each in and out of the country) and complicated visa applications (they wanted the details of the flights and hotelbookings, whereas we were opting toward flexibility) we decided to leave out this country and spend more time in Thailand instead.
